The secret of delicious trotter dishes is using high quality ingredients, and making dishes in large quantities at a time.

Bean Soup with Trotter


Ingredients for four:

1 smoked trotter (approximately 80 dkg)
1 cup of beans
2 carrots
1 parsley
2 onions
4 segments of a garlic
salt, pepper, bay leaf, red paprika, sour cream, vinegar
for thick sauce: flour and oil


 

Preparation:

Put the smoked trotter and the beans into cold water with the onion, garlic and bay leaf. When it is half-boiled, add the sliced vegetables. When the trotter is soft-boiled, take it out of the soup, remove the bone and dice the meat. Make a light brown thick sauce, remove from heat, add crushed garlic and red pepper, stir until soft, and thicken the soup with it. Put the diced meat back into the soup, and serve with vinegar or sour cream.



Trotter Fried in Beer


Ingredients for four:


1 raw trotter (approximately 1 kg)
2 dl beer
1 garlic
2 onion
salt, pepper, bay leaf

For the side dish:

Fried cabbage:
1 small cabbage
salt, sugar, ground pepper

Napkin loaf:
2 buns
10 dkg flour
2 eggs
2 dkg onion
parsley, salt, pepper



Preparation:

Half-boil the trotter. Put salt, garlic, onion and bay leaf into the gravy. Put the trotter into oven-pan, sprinkle with fat, salt and caraway seeds, then fry until it is red, while watering with beer.

For side dish, serve fried cabbage or napkin-loaves sliced and fried in oil. Napkin loaves are in fact traditional bun loaves wrapped in clean napkins and boiled in hot steam.


 

Trotter in oven with garlic sour cream


Ingredients for four:


1 smoked trotter (approximately 80 dkg)
1,20 kg of potatoes
0,5 l sour cream
3 segments of garlic
10 dkg 'Kolozsvár' bacon
salt, white pepper




Preparation:

Boil the smoked trotter in hot water, then remove the bone and dice the meat. Fry the  boiled potatoe slices in oil, then put them into the oven with the meat dices on top. Mix sour cream with crushed garlic, salt and white pepper and drip onto the meat dices. Put thin smoked bacon slices on top and fry in pre-heated oven for 10 minutes.

Márkó's favourite


Márkó's favourite is pork fried in breadcrumbs with French fries. We offer smaller portions for children, so that they can enjoy curd-balls as a dessert. (as if Mommy made it.)
